Coconut Pie. Easy and delicious.

Easy and delicious. And takes just a few minutes to prepare. Add ingredients to a blender, pour into a pie pan, top with coconut and bake. It is that easy!!!😀😷


Pie Crust Ingredients:
1. All-purpose flour 200 g.
2. Salt ½ teaspoon
3. Icing 20 g.
4. Butter (cold) 70 g.
5. Cold water 60 g.
6. Vinegar 1 teaspoon

Filling Ingredients:💦1. Coconut juice (part 1) 100 g.
2. Coconut juice (part 2) 330 g.
3. Young coconut slices 300 g.
4. Cornstarch ​ 45 g.
5. Milk 60 g.
6. Sugar 50 g.
7. Salt ¼ teaspoon

How to make Pie Crust: 💥
1. Add flour, Icing, salt and butter to a large bowl. Mix well to combine.
2. Add the butter. Using a pastry blender or your fingers, press the butter against the flour mixture.

3. Slowly add cold water and vinegar.  (Mixture is ready when you pinch some of the crumbly dough together with your fingers, it holds together.)
4. Use your hands and knead (Do not over-knead)
4. Wrap the dough in plastic wrap and refrigerate when ready to use.

Prepare the Filling:💦
1. Mix well together coconut juice (part 1) and cornstarch 
2. In a pan, combine coconut juice (part 2) sugar and coconut slice, cook over low heat. Stir until sugar is dissolved.

3. Add coconut juice (part 1) and continue stirring until tick.
4. Cool for a bit.

Prepare the Pie: ​💦
1. Divide the dough mixture into two even-sized mounds. 
2. Using a rolling pin, roll out each dough to a few inches larger than your pie plate (about 12" for a 9" pie plate)

Bottom crust:💦
1. Carefully place onto a 9-inch pie plate. Gently press the pie dough down so that it lines the bottom and sides of the pie plate.
2. ​Use a pair of kitchen scissors to trim the dough to within 1/2 inch of the edge of the pie dish.
3. Add the coconut filling.

Top crust: 💦
1. Gently place onto the top of the filling in the pie.
​2. Trim excess. Fold the edge of the top piece of dough over and under the edge of the bottom piece of dough, pressing together. Flute edges using thumb and forefinger or press with a fork.
3. Brush with egg wash (1 beaten egg + 1 tbsp milk). Just to make the top golden. (optional)

Bake at 180-200 C for 40-45 minutes or until crust turns golden brown.
Remove from oven and cool on wire rack.
Serve warm.😊
